You guys really have to try this one, especially in the summer:
Chocolate and Coconut Cream Fondue
1 medium sized can sweetened cream of coconut (Becca, I can't find cream of coconut here so what I did was to pour the whole can in a bowl, use the electric mixer on it for like 2 minutes (until it's kind of fluffy) then I added 1/2 c. of confectioner's suger
1/2 pack of semi-sweet dark chocolate chips
1/2 whipped cream
1/2 tsp. chocolate essence
1. Combine sweetened cream of coconut and chocolate in a pan. Stir mixture over very low heat until chocolate melts and mixture is smooth. Stir in whipping cream and extract.
2. Transfer mixture to fondue pot. Place over candle or canned heat burner. Serve with fruit for dipping.
(rice crackers, strawberries, sliced mangoes and caramelized coconut shreds)
Anyhoo, I have to be off now, since that effing Paul decided to do his leave at such an early time.
Oh and if anyone knows how to take care of a baby kitten, who's still crawling, please tell me how. I don't know what came over me by fostering this little kitten, but now I'm so up for it and I'm fussing over Nienna right now like a Mom. I didn't know kittens can be this cute! I hope she grows to be a strong, big cat.
